The photo’s really draw us into this event..thanks for sharing! I hope I come away from the Temecula Baloon and Wine Festival in June with such a beautiful collage of photo’s! :)

Most unusual was the dessert (third from left, top row) of Oak Tree Pot de Creme. The chef (Ben Spungin) explained they used the essence of oak tree to impart flavor. It didn’t taste as strange as I thought it would be—at least it worked better than the Douglas Fir (aka Xmas Tree) Sorbet I had in a Seattle restaurant two years ago (not related to Chef Spungin).

One of my favorites was the Ahi Tuna with Feta Foam, Yuzu Gelee and Truffle Sombazu (top right corner) by Joel Huff of Silks. All of these ingredients went surprisingly well together. I also enjoyed the Duck Meatball with White Asparagus Puree (Foam?) (middle picture on the left side). Lastly, I enjoyed both the lobster (right under the Ahi Tuna picture on the top) and the Langoustine with Tomato Lacquer. I ate three of those things!
