Sounds like a really yummy recipe!!

It is a great dish, especially if you have guests as you can toss the ingredients together until ready to bake. I cooked mine is a beautiful yellow dish, it really looked good. Very nice with a dry Muscadet or chilled Rose. And left overs are wonderful lunches as you have a whole meal in one dish.

sounds good but can you skip the red peppers?

Sure you can skip the red peppers, but the little ones are so sweet!
I understand some people (including myself) have problems digesting peppers. But for some reason I don’t have problems with these little ones.

But the grape tomatoes taste actually sweeter after biting into an olive. I am thinking of what other vegetable you could use and small Japanese eggplant may actually be very good too. The smaller eggplants cook quicker and are more tender. If you like fennel bulb you may try it too, or baby zucchini as they are all in the Mediterranean theme.
